Exmouth Fresh Prawns
Do you know what a green prawn is?
The term green prawn is used for when a prawn is uncooked.
Green, wild-caught prawns have a shelf life of around 4 hours before they start going black. This is why we don’t get fresh green prawns in Perth!
But we do get Fresh Cooked Prawns.
Western Australian Prawns are almost always frozen!
Don’t let the fact that they are thawed out on the fishmongers shelf fool you. They receive them from the North frozen and defrost them for you.
Exmouth Fresh Wild cooked prawns are the only prawns to be sent to Perth fresh.
You can buy them from either Kailis in Leederville or Innaloo Seafresh and usually retail for around $40.00 a kilo in the peak season and can go above that in the off-season.
Just recently I had the pleasure of being able work with this product which has been around for years and that I know really well! The Exmouth Gulf is the true home of the Australian prawn in my eyes. The fishermen of the area have been fishing there for over 40 years and they all contribute to making sure that their livelihood is going to be around for many more years to come! The reason I know this product so well is because the area is only a couple of hours away from where my Dad catches his prawns. The Exmouth Fresh prawns have more flavour and a great texture. I recently used the cooked prawns in a number of dishes for an M.G. Kailis photo shoot. In the past I have always used raw prawns for these dishes, but in actual fact, I found that using the cooked prawns and adding them at the last minute gave me a much better result.
Wow! I’ve been claiming to know how to cook prawns for years now but had never tried using cooked prawns and warming them to finish off a dish.
The quality was better!

Unlike some other fishing companies which often send boats out for weeks at a time the boats from Exmouth Fresh go out each night and return the following morning with their catch. On the shore of the Exmouth Gulf, a state-of-the-art processing facility allows for minimal handling. The Exmouth Gulf Prawn Fishery has been accredited as being ecologically sustainable by the Commonwealth Department of Environment and Heritage. Fresh caught prawns are delivered in a special, chilled brine, so they're never frozen. They're then sorted according to size and carefully cooked using a unique process which enhances their delicate texture and full flavour.
Later that day, they are packed and ready for delivery.
