Peter Manifis
Peter Manifis was born on the 30th of December 1977 in Perth. In his informative years Peter enjoyed watching his parents working in their Fish Processing Plant and renowned Fish & Chip shop. At the early age of 10 he had made the decision to become a Chef.
While at the Port Hedland Tafe Peter came to Perth with a group of fellow students to visit some of Perth’s best Restaurants. His passion for food and fine dining was amplified at the Loose Box in Mundaring; this is when his passion for food took its next step.
Peter began his career as an Apprentice at The Loose Box in Mundaring. From there spent time in various notable Perth restaurants, including 44 King Street with Russell Blaikie. Working at 44 King Street was another pivotal point in his career. "Russell really taught me to realise the quality of the product we have here in Australia".
His first position as Head Chef was at a restaurant in Applecross called Gucce. Peter got a taste of success when in the first year of opening, the restaurant reached the Gold Plate Finals for Mediterranean Dining and The Health Award and won the Most Healthiest Menu award.
During Peter's second year at Gucce, they won the Casual Mediterranean Dining Award and were nominated for The American Express awards.
Peter's next position was with Albasio La Pegna as the Head Chef at Zafferano at The Old Swan Brewery. In his first year there they won the Best Seafood Restaurant award.
After visiting a variety of oversea's restaurants Peter formed Vineleaves. Kuppa in Claremont, Kailis Fish Market in Fremantle and Incontro South Perth are just some of the restaurants that have enjoyed Peter's services.
