PERTH CHEF PUTS WA SEAFOOD DISHES ONLINE
Planning to entertain a few guests and impress them with delicious Western Australian seafood dishes such as garlic prawns, baby vegetable and yabby salad, salt and pepper squid, or a seafood curry?
Thanks to Perth chef Peter Manfis, recipes for these and many other culinary delights are just a click away at the Vineleaves website he set up a year ago. And by the end of this month it will have available video lessons direct to your PC which can show you exactly how to cook up dishes that will make your mouth water.
Twenty-eight-year-old Mr Manfis, who grew up in Onslow in WA's north and whose parents own a prawn trawler and fish and chip shop, decided when he was 10 to become a chef. While studying at Port Hedland TAFE, he visited the Loose Box Restaurant in Mundaring as a part of his training - which is when his passion for food took a great leap forward. He was lucky to be offered an apprenticeship at this award-winning restaurant and went on to work in other fine restaurants including 44 King Street (Perth), Gucce (Applecross), C Lounge Restaurant (Perth), Cream (East Perth), and Zafferano Restaurant at The Old Swan Brewery - which won a "Best Seafood Restaurant" award in the year he was working there. Mr Manfis is currently consulting at Incontro in South Perth.
"My focus at the moment is on my company Vineleaves Catering Consultancy," Mr Manfis said. "We offer cooking classes, online podcasts, demonstrations of products and food, elite catering and consulting to restaurants, cafés and food shops. We also have an online forum for all foodies to chat and discuss recipes, ideas, as well as listing many culinary events taking place around Perth and WA." Mr Manfis said his aim with Vineleaves is to create a place where Western Australian food and produce is promoted and shared with the rest of Australia and the world.
