Apricot Mt Barker Chicken [poultry]

Mount Barker Free Range Chicken produces the best tasting chicken in Western Australia.
The clean, green and traditional production of Mt Barker Free Range chicken produces a full-flavoured chicken that is lower in fat and incredibly succulent and tender.

Ingredients

Method:

  1. Put apricots into pot with juice and bring to the simmer until the apricot juice reduces by half and set aside.
  2. Trim excess fat off chicken and place in fridge
  3. Slice up red onion, garlic and finely slice chives and set aside
  4. Trim the stalks off English spinach and wash really well twice in sink of cold water, then drain well in colander
  5. Pre-heat your oven to 160 degrees and start to heat up an oven proof pan on the top of the stove
  6. Once pan is hot, season chicken breast with salt and pepper and add oil to pan, in a second motion add chicken and start to seal on one side
  7. Once chicken is golden brown turn over and add onions and garlic, sweat off until they start to go soft around 5 mins
  8. Add apricot mix to chicken, give it a stir and place in pre-heated oven to finish cooking this should take around 5 to 8 minutes
  9. In a separate pan heat up a little oil and add spinach, season with little salt and begin to wilt
  10. Once Chicken is cooked bring out of the oven and add chives, take chickens out of sauce and slice in three with a sharp knife
  11. To serve arrange drained spinach on the plate with sliced chicken around it, Then spoon over a little of the apricot sauce to your liking
