Banana Leaf Wrapped Barramundi

This is an alternative method of cooking one of Australia's most prized fish. By wrapping the Barramundi in banana leaves the delicate flavour of the fish is combined with the sharp contrast of chili, lime and coriander.

Ingredientsimage: Banana Leaf Wrapped Barramundi
1 Whole Barramundi
600/800g scaled and gutted
2 Large Banana Leaves

1 Red chilli finely chopped
2 limes Juice
2 Shallots finely chopped
20/30g Palm Sugar
4 Tlb of Fish Sauce
10 Coriander root chopped
4 bamboo skewers

Method:
1) Chop chilli, shallots, juice limes & crush palm sugar and
2) Chop the coriander root and keep separate
3) Mix all ingredients in a mortar and pestle until the sugar dissolves then taste
(This dressing should be a perfect balance of lime, fish sauce and palm sugar)
4) Turn Barbeque on medium heat
5) Place Banana leaves on a large bench crossways
6) Place the Barramundi in the middle of the leaves and score twice on each side with knife
7) Pour half of the dressing onto the Barramundi
8) Wrap up like a parcel and skewer so it doesn't open
9) Place on the Barbeque for 10 mins each side
10) Open up poor rest of dressing on and eat hot
11) Serve with steamed rice
