Basic Tomato Sauce

IngredientsBasic Tomato Sauce
5 litres tinned crushed tomatoes
1 Kg onions, roughly chopped
1 Kg carrots, roughly chopped
1 Kg celery, roughly chopped
2 red capsicums, deseeded and chopped (optional)
100ml vegetable oil
50g (5 tablespoons) salt
10g pepper
50g basil, roughly chopped (preferably fresh)

Method:

  1. Chop the onions, carrots, celery and capsicums.
  2. Heat the vegetable oil in a large pot.
  3. Add all the vegetables to the pot and sweat off until the onions and celery start to become translucent.
  4. Add the salt, pepper and tomatoes and simmer for 30 minutes stirring regularly.
  5. Add the fresh chopped basil and simmer for a further 10 minutes on low heat.
  6. Puree using a hand blender.
