Basic Tomato Sauce

Ingredients
5 litres tinned crushed tomatoes
1 Kg onions, roughly chopped
1 Kg carrots, roughly chopped
1 Kg celery, roughly chopped
2 red capsicums, deseeded and chopped (optional)
100ml vegetable oil
50g (5 tablespoons) salt
10g pepper
50g basil, roughly chopped (preferably fresh)
Method:
- Chop the onions, carrots, celery and capsicums.
- Heat the vegetable oil in a large pot.
- Add all the vegetables to the pot and sweat off until the onions and celery start to become translucent.
- Add the salt, pepper and tomatoes and simmer for 30 minutes stirring regularly.
- Add the fresh chopped basil and simmer for a further 10 minutes on low heat.
- Puree using a hand blender.
