Chicken and Sweet Corn Soup

INGREDIENTS Chicken & Sweet Corn Soup
2 x 425g tins of corn
4 onions, diced
2 tablespoons vegetable oil
1 teaspoon salt
100g cooked chicken breast (no skin)
3 teaspoons reduced salt chicken stock powder
2 litres boiling water
2 tablespoons reduced salt soy sauce
1 batch of white sauce mixture

Method:

  1. Make white sauce according to recipe provided. Set aside.
  2. Heat oil in a large pan, add onions and corn and sweat off.
  3. Stir the reduced salt stock powder into the boiling water.
  4. Add the stock, chicken and reduced salt soy sauce to the pan and cook for 10 to 15 minutes.
  5. Add the white sauce to the pan and puree with a hand blender. .
