French Onion Dip & Crudités
Serves 4 as nibbles
This is a fabulous french onion dip that is so much nicer than the versions you can buy in the shops and better yet, it only takes 10 minutes to whip up.
Crudités are an often forgotten side dish which are a healthy variation to biscuits and crackers.
Ingredients 
100ml Njoi Olive Oil
3 Large Brown Onions
2 Cloves Garlic sliced
10 Sprigs thyme chopped
100ml Balsamic vinegar
50g Brown Sugar
Salt & Pepper
500g Cream Cheese (Philly)
1 Bunch Chives Chopped
Crudités:
1 Fennel Bulb
(halved, cored and sliced)
1 Bunch Radishes
(washed & sliced)
1 Bunch Baby Carrots Peeled
Method:
1) Take Cream cheese out of fridge
2) Slice Onions, garlic and chop thyme
3) Heat an up with a little oil add onions, garlic and thyme
4) Season with Salt and Pepper
5) Stir continually, letting them colour without burning
6) Add balsamic and sugar
7) Cook for 20 mins or until onions start to toffee
8) Put aside let cool
9) Mix Cheese in bowl with wooden spoon
10) Add Chives and semi cooled onion mix to cheese, mix well
11) Season with salt and pepper
12) Arrange on plate with lovely cut vegetables above
