Muffins

Ingredients 
Wet mix
250ml boiling water
1 cup rolled oats
125ml vegetable oil
1 cup brown sugar
2 eggs
500ml low fat yoghurt
1 cup sultanas
2 cups tinned apples (if storing mixture in fridge
do not add these until mixing batch ready to bake)
Dry mix
1½ cups wholemeal flour
1 cup plain flour
2 cups All bran
2 tsp (or 10g) baking soda
Method:
- Preheat oven to 180°C.
- Combine the rolled oats and boiling water in a bowl and allow to cool.
- Thoroughly combine the oil, sugar, eggs and yoghurt and stir in the sultanas.
- Add to the soaked oats.
- Combine the dry mix and then thoroughly mix into the wet mix.
- Keep this batter in a sealed container in the fridge for up to six weeks.
- Gently mix and add apple before placing into prepared pans to bake for about 12 minutes or until the muffin springs back at you when pressed.
