Muffins

Ingredients Muffins
Wet mix
250ml boiling water
1 cup rolled oats
125ml vegetable oil
1 cup brown sugar
2 eggs
500ml low fat yoghurt
1 cup sultanas
2 cups tinned apples (if storing mixture in fridge do not add these until mixing batch ready to bake)

Dry mix
1½ cups wholemeal flour
1 cup plain flour
2 cups All bran
2 tsp (or 10g) baking soda

Method:

  1. Preheat oven to 180°C.
  2. Combine the rolled oats and boiling water in a bowl and allow to cool.
  3. Thoroughly combine the oil, sugar, eggs and yoghurt and stir in the sultanas.
  4. Add to the soaked oats.
  5. Combine the dry mix and then thoroughly mix into the wet mix.
  6. Keep this batter in a sealed container in the fridge for up to six weeks.
  7. Gently mix and add apple before placing into prepared pans to bake for about 12 minutes or until the muffin springs back at you when pressed.
