Pea and Ham Soup
Serves 8 -10

Ingredients
300g dried green split peas
2 onions, chopped
2 carrots, peeled and chopped
4 stick of celery, chopped
200g potato
2 teaspoons dried thyme
1 teaspoon of dried basil
1.5 tablespoons of reduced salt chicken stock powder
1.5 litre of boiling water
100g smoked ham hocks
Method:
- Soak split peas overnight in a large bowl of cold water.
- The next day drain the peas and transfer into a large pot.
- Stir the reduced salt stock powder into the boiling water.
- Add the onion, carrot, celery, potatoes, dried herbs, reduced salt chicken stock and ham hocks to the pot.
- Cook covered over low heat for about 1 hour, skimming every 30 minutes.
- Remove pot from heat and serve.
