Pea and Ham Soup

IngredientsPea and Ham Soup
300g dried green split peas
2 onions, chopped
2 carrots, peeled and chopped
4 stick of celery, chopped
200g potato
2 teaspoons dried thyme
1 teaspoon of dried basil
1.5 tablespoons of reduced salt chicken stock powder
1.5 litre of boiling water
100g smoked ham hocks

Method:

  1. Soak split peas overnight in a large bowl of cold water.
  2. The next day drain the peas and transfer into a large pot.
  3. Stir the reduced salt stock powder into the boiling water.
  4. Add the onion, carrot, celery, potatoes, dried herbs, reduced salt chicken stock and ham hocks to the pot.
  5. Cook covered over low heat for about 1 hour, skimming every 30 minutes.
  6. Remove pot from heat and serve.
