Pizza Muffins

Ingredients
5 English muffins, split
½ cup basic tomato sauce (recipe provided)
5 slices lean ham, roughly chopped, drained
1 cup low fat cheese, grated
¼ cup red or green capsicum, diced
¼ cup mushrooms, sliced
100g canned pineapple rings in natural juice
Method:
- 1. Toast muffins on both sides.
- Spread muffins with tomato paste.
- Layer muffins with the remaining ingredients.
- Grill for 2 minutes or until topping has warmed through and cheese has melted.
