Salmon with Garlic Mash
One of my favorite quick dishes.
There's nothing better than a perfectly cooked piece of delicious, fresh salmon on creamy mashed potato.

Ingredients

1.5kgs Salmon Fillet cut straight up into 150g serves
50ml Vegetable Oil
1bunch or chive
1.8kgs Peeled royal blue potatoes
300ml Milk
150g salted Butter
40g Garlic cloves
Salt and Pepper
Method:
1) Cut potatoes in half, put in pot fill with water and add 80g salt then put on the stove and cook for 30mins once boiled.
2) When nearly cooked in separate pot put milk, butter, garlic crushed 20g salt and 5g white pepper then put on the stove and heat untill is has almost boiled.

When potatoes are cooked drain well and mash till fine, then add strained milk reduction and mix well, till smooth and creamy.
Check salt and pepper.
4) Season salmon with salt and pepper and in a frypan heat 50ml of oil and cook portioned salmon for up to 3mins on each side.

Take off and let cool.
Once mash is cooled it's ready to serve.
Sprinkle each with copped chives.
Chef's Tips
Leave your salmon slightly pink on the inside as it will continue to cook on the plate.
