White Bean Dip

Ingredients
2 x 425g tins of white beans
40g tomato paste
1 onion, diced
20g parsley
10ml vegetable oil
5g salt (1 teaspoon)
2g pepper
Method:
- Drain beans and rinse, set aside.
- Heat up the oil in a pot.
- Add the onion, salt and pepper and fry until the onion is soft.
- Add the drained beans and tomato paste and cook for about 5 - 10 minutes.
- Remove pot from heat and puree with a hand blender.
- Add the parsley and let the dip cool in a separate bowl.
