White Bean Dip

IngredientsWhite Bean Dip
2 x 425g tins of white beans
40g tomato paste
1 onion, diced
20g parsley
10ml vegetable oil
5g salt (1 teaspoon)
2g pepper

Method:

  1. Drain beans and rinse, set aside.
  2. Heat up the oil in a pot.
  3. Add the onion, salt and pepper and fry until the onion is soft.
  4. Add the drained beans and tomato paste and cook for about 5 - 10 minutes.
  5. Remove pot from heat and puree with a hand blender.
  6. Add the parsley and let the dip cool in a separate bowl.
