White Sauce Pasta (Macaroni Cheese)

INGREDIENTS
500ml low fat milk
2 tablespoons polyunsaturated margarine
2 tablespoons wholemeal flour
½ teaspoon salt
1 teaspoon white pepper
50g low fat cheese, grated
1 large head of cauliflower, lightly steamed
5 cups of cooked pasta
Method:
- Cut the cauliflower into small pieces and lightly steam over a pot of boiling water.
- In another pot heat up milk with salt and pepper in it.
- In a separate pot add margarine and melt.
- Once melted add flour and mix with a wooden spoon until smooth. Continue to cook for another 5 minutes stirring continuously.
- Gradually add the milk to the flour and margarine mixture beating constantly to ensure the mixture remains smooth.
- Once you have used up all the milk, add the cauliflower and continue to cook the sauce for another 5 minutes.
- You may wish to quickly blend the sauce with a hand blender to 'hide' the cauliflower, but this is not essential.
- Add the cheese and stir through until melted.
- Pour over the cooked pasta and sprinkle with a small amount of low fat grated cheese if desired.
